Every year , nearly 100 million tonnes of soyabeans are processed as food for people and animals-an almost inconceivable figure . From this quantity it would be possible to obtain 500,000 tonnes of lecithin-but actual production only amounts to about 125.000 tonnes . Although the Frenchman Maurice Gobley discovered egg lecithin, which he called "lekithos" , as early as 1850, lecithin with its many and various functions did not come into its own until the triumphant advance of the soybean . It was no doubt pure coincidence that a Hamburg captain-Lucas Meyer-chose this very time to set up an axport firm for pharmaceutical specialities . In His earlier years he had become familiar with the hard and spartain life on board tramp sailing ships. he had a good understanding of the mentality of people in other countries and was familiar with their anxieties , illnesses and needs. On 14 june 1923 the entering of his company in the commercial register marked the opening of a new chapter in his life, a chapter that was to record a succussful response to a great new challenge . Initially his efforts were centred round persuading large and established pharmaceuticals manufacturers to sign agency agreements for medicines to fight the scourges of malaria and dysentery , giving him exclusive rights to export such product to the countries at risk . From 1929 onwards, this phase was followed by a period of fruitful collaboration with his brother, Dr. Heinz Meyer-Castens, who was building. This was where the preparatins were now produced that were so urgently needed in countries overseas . In 1938 Lucas Meyer expanded, setting up a branch in Brazil. Some medicines already contained lecithin as an important constituent. In the early thirties , for example, a calcium an iron preparation was put on the market under the name " Dome-Calcium " as a tonic and restorative for children and women in childbed . From here it was still a long, but successful road to the lecithin specialist of today :

various parts of the world, and a further two associated companies .

laboratories so that they can offer a faster and more market oriented
response in their task of advising and supplying our customers.
There
In order to intensify contacts with external research, the company has staged a " Lecithin Colloquium " at two year intervals since 1980. This gives well-known scientists and specialists an opportunity to report and discuss new findings relation to lecithin . The results of this work are then published, putting knowledge about lecithin and its many and varied applications on a board footing . Over the decades, production facilities have been steadily enlarged, modernized and constantly updated to maintain a state-of-the-art capability. Bacth production has given way to continuous processes, which these days are mainly controlled and checked automatically. The company's own computer centre ensures rapid processing and availability of all the data that are of crucual importance for modern production and company management . People's expectations of improvements in the quality of life make it essential to keep improving product . Simple stages in the processing of crude lecithin led to the development of those high-grade specialized lecithins that make it possible to exploit the supplementary and reinforcing effects of other product groups, expecially hydrocolloids and proteins and non-lecithin-based emulsifiers. Furthermore , other lecithin such as sunflower, corn or rapeseed lecithin are increasingly attacting more attention today . The production of special lecithins with prescribed properties for specific hig-grade products will continues to be one of the main functions of LUCAS MEYER in the future as well. Between 1977 and 1999 , he headed the international group Lucas Meyer – The Lecithin People, which had annual sales of € 115 million in its final year. The company was sold to SKW Trostberg AG (now Degussa AG) in mid-1999 . Mr Meyer's core skills are corporate planning and funding . Mr Michael Meyer has degree in Engineering from TU Berlin and has worked for BASF AG and Degussa AG . He is specialised in process engineering, process control and data processing . Lecithin One of Nature's building blocks |

The story of the discovery of lecithin goes back to the beginning of the nineteenth century. In 1811 L.N. Vauquelin reported the presence of organically bound phosphorus in fat-containing preparations obtained from brain matter . In 1846, Gobley isolated from egg-yolk an orange-coloured sticky substance with emulsifying properties , which he named lecithin after "lekithos" , the Greek word for egg-yolk. It soon became apparent that the phosphorus-containing companion substances to fats did not have a unifrom chemical composition, but comprised a whole class of substances which we call phospholipids. Today we know that phospholipids , together with other polar lipids, are found as vital constituents of membranes in all animal and vegetable organisms.
To prevent any misunderstandings arising from the information presented in this booklet , let us difine here what we mean by lecithin , polar lipids and phospholipids .
Lecithin Mixture of polar and neutral lipids with a polar-lipid content ( insoluble in acetone ) of at least 60% . ( This definition corresponds to the standardized European Community description of lecithins for the food sector . It is thus deliberately different from the scientific usage in which lecithin is the trivial name for a particular phospholipid , namely phosphatidylcholine ) .

In commoercial lecithins, glycerophospholipids are of outstanding importance in terms of both quantity and function . All the natural representatives of this group can be derived from sn-glycero-3-phosphate* , in other words thet have the following basic structure .
If both X and Y are fatty acid residues we talk of diacylglycerophosphoslipids ; if only one fatty acid residue is present and if X or Y is a hydrogem atom, the sudstance in question is the corresponding monoacylglycerophospholipids , or lysophospholipid . The acyl residue X and Y attached to carbon atoms C1 and C2 may vary considerably ( chain lenght, degree of saturation ) depending on their origin. Moreover , in natural products X and Y are rarely of the same chemical nature ; generally speaking the fatty acid attached to C2 is more unsaturated than the one attached to C1 . The individual species of glycerophospholipids differ in the nature of the alcohol Z esterified to the phosphate ( with the exception of phosphatidic acid , in which Z is a hydrogen atom ) . This alcohol may be an aminoalcohol ( eg choline, ethanolamine ) , a polyvalent alcohol ( eg inositol, glycerol ) or even a hydroxyamino acid ( eg serine ) . We therefore make a distinction between nitrogen-containing and nitrogen-free diacylphospholipids . In the nitrogen-containing variety the molar ratio of N:P is always 1 , and they are therefore also knows as monoamino-phospholipids. The following diagram lists the principal groups of diacyl-phospholipids that can be distinguished by the nature of Z . Several parallel systems of nomenclature are used in the literature for naming these groups : The systematic nomenclature ( eg 1,2-diacyl-sn-glycero-3-phosphocholine ) , a semi-synthetic nomenclature in which the 1,2-diacyl-sn-glycero-3-phospho residue is called "phosphatidyl" ( eg phosphatidyl-choline ) , and finally trivial names ( eg lecithin , cephalin ) .
Sphingosphospholipids The commonest and best known is sphongomyelin, which is only found in animal organisms . It consists of one molecule each of ceramide, phosphoric acid and choline ( ceramide phosphorylcholine).
Glycolipids Glyceroglycolipids occur mainly in plants and microorganisms , although small quantities are also found in animals , particularly in the brain . 1,2-diacyl-sn-glycerol is linked to the carbohydrate unit via the 3-hydroxy group by means of an α- or β-glycosidic bond. The sugars involved are mostly d-galactose , d-glucose and d-mannose . The commonest of these substances are monogalctosyl- and digalactosyl- diglycerides ( MGDG and DGDG ) .
Sphingoglycolipids , on the other hand, are typical polar lipids of animal organisms . They consist of ceramide and a carbohydrate component which is linked to C1 on the long-chain base by a β-glycosidic bond.
Occurrence and isolation As already mentioned , polar lipids and especially phospholipids are important elements of the structure of biological membranes , and they therefore occur in all cells of animals , plants and microorganisms . Phospholipids are also found in certain body fluids , above all in the blood plasma of vegetabrates , where they are kept in solution in the form of "lipoproteins" . The percentage composition of the polar lipids and their fatty acid pattern is generally characteristic of the origin of the product . Today lecithins derived from a variety of raw materials are in commercial use . The main vegetable product is soybean lecithin , but lecithin from sunflower , rapessed , corn and to lesser extent peanuts are also produced . The raw material of animal origin is almost entirely egg-yolk , brain matter being used only for pharmaceutical specialities . Lecithins from micro-organisms could be of considerable importance in the future , since by choosing the right organism and / or the right culture and substrate conditins it is possible to manufacture products tailor-made for specific applications. |
